- 1 tbsp organic lime juice
- 1 tbsp toasted sesame oil
- 1 tbsp organic olive oil
- 200 g organic cucumber, ribboned
- 1 piece organic spring onion, sliced
- 1 piece ripe organic avocado
Step-by-step method
- Pat the tuna dry, season and roll in the sesame seeds.
- Sear in a very hot pan with the olive oil, 30 seconds on each side, then cool for 2 minutes.
- Whisk tamari, ginger, lime and sesame oil.
- Slice the tuna thinly and serve with cucumber, avocado and spring onion; spoon over the dressing.
Chef’s tips
- The pan must be smoking hot so the inside stays raw and cool.
- Tuna served rare must be sashimi-grade and very fresh; avoid in pregnancy or with a weak immune system. Large tuna can carry mercury, so enjoy it now and then rather than daily.
Variations
- Use salmon.
- Add a little wasabi to the dressing.
Storage
Eat on the day it is made.
