Ingredients
- 150 g organic raspberries
- 100 g organic blackberries
- 120 ml organic heavy cream
- 3 piece organic egg yolks
- 25 g organic erythritol, powdered
- 0.5 tsp organic vanilla extract
- 1 tsp organic fresh thyme leaves, finely chopped
- 20 g organic sliced almonds
- 80 g organic crème fraîche
- 1 pinch fine sea salt
Step-by-step method
- Heat the oven to 200 C (400 F). Divide raspberries and blackberries between four shallow ovenproof dishes, keeping the berries whole where possible.
- Whisk egg yolks, cream, powdered erythritol if using, vanilla, thyme and a pinch of salt until smooth. Pour the custard evenly over the berries.
- Scatter sliced almonds over each dish. Bake until the custard is just set at the edge and lightly golden on top, about 15 minutes.
- Rest the gratins briefly so the custard settles. Serve warm with cool crème fraîche and a few fresh thyme leaves.
Chef’s tips
- Provisional nutrition: do not use these figures as a safe daily carb allowance until Claude verifies ingredient gram weights against exact Matvaretabellen/USDA records and checks product labels.
- Choose ripe but firm berries so they keep their shape as they bake.
- Use shallow dishes for a higher proportion of golden custard top.
- The centre should tremble slightly when the dishes come out of the oven.
Variations
- Use organic strawberries in season, sliced thickly.
- Swap thyme for finely grated lemon zest and a few torn mint leaves.
- Replace sliced almonds with chopped organic pistachios.
Storage
Best served warm on the day. Refrigerate leftovers promptly and use within 2 days. Reheat gently in a low oven; the custard will be softer after chilling.
