Ingredients

  1. 4 piece organic pasture-raised eggs (for either method)
  2. 20 g organic butter (1 tbsp to cook, 1 tsp cold to finish)
  3. 1 tbsp organic crème fraîche or double cream
  4. 1 pinch fine sea salt, white or black pepper
  5. 1 tbsp organic chives, chopped
  6. 60 g organic baby spinach or rocket, to serve
  7. 0.5 piece organic avocado, sliced, to serve

Step-by-step method

  1. Crack the eggs into a bowl, add a pinch of salt and whisk until just combined, with no need to over-whip.
  2. Melt the butter in a non-stick pan over low heat. The pan should never sizzle.
  3. Pour in the eggs and stir slowly and constantly with a silicone spatula, sweeping the bottom and sides.
  4. Keep stirring for 3–4 minutes. When the eggs look just-set but still glossy and loose, take the pan off the heat: they keep cooking from residual heat.
  5. Finish by stirring in the cold butter and crème fraîche to stop the cooking and make them creamy.
  6. Plate on the greens with avocado, chives and flaky salt.
  7. Bring a saucepan of water to a rolling boil.
  8. Lower in the eggs straight from the fridge, using a spoon. Start a timer for 7 minutes.
  9. Meanwhile, fill a bowl with ice water.
  10. At 7 minutes, transfer the eggs to the ice bath for 5 minutes.
  11. Peel by cracking all over and rolling gently under your palm, peeling under a thin trickle of water.
  12. Halve and serve on the dressed greens with salt, olive oil and lemon.
