Ingredients

  1. 180 g organic almond flour
  2. 4 piece organic eggs
  3. 120 g organic erythritol, powdered
  4. 150 g organic ricotta, drained
  5. 60 g organic butter, melted and cooled
  6. 1 piece organic orange, finely grated zest
  7. 0.5 tsp organic fresh rosemary, very finely chopped
  8. 1 tsp baking powder
  9. 0.5 tsp fine sea salt
  10. 150 g organic mascarpone
  11. 80 ml organic heavy cream
  12. 80 g organic blackberries

Step-by-step method

  1. Heat the oven to 170 C (340 F). Line the base of a round cake tin with parchment and butter the sides lightly.
  2. Whisk eggs and powdered erythritol until pale and slightly thick. Whisk in ricotta, melted butter and orange zest until smooth.
  3. Stir almond flour, rosemary, baking powder and salt together. Fold the dry mix into the egg mixture just until no flour pockets remain.
  4. Scrape batter into the tin and level the surface. Bake until golden and a skewer comes out with a few moist crumbs, about 35 minutes.
  5. Cool in the tin for 10 minutes, then lift onto a rack and cool completely before topping.
  6. Whisk mascarpone and cream until softly thickened. Spread over the cooled cake and finish with blackberries and a few tiny rosemary leaves.
