- 40 g organic butter
- 1 piece organic shallot, finely chopped
- 2 piece organic garlic cloves, sliced
- 100 ml dry white wine
- 100 ml organic double cream
- 15 g organic parsley, chopped

Step-by-step method
- Scrub the mussels and pull off the beards. Throw away any that stay open when tapped.
- Soften the shallot and garlic in the butter in a wide pot, 3 minutes.

Chef’s tips
- Most of the alcohol cooks off, and half the liquid stays in the pot.
