- 100 g organic daikon or radish
- 40 g organic carrot
- 2 pcs organic spring onions
- 23 g sea salt
- 5 cloves organic garlic
- 20 g organic fresh ginger
- 2 tbsp organic gochugaru or mild chilli flakes

- 1 tsp organic apple cider vinegar
Step-by-step method
- Toss the cabbage with 15 g salt and leave 1 hour, turning once.
- Rinse briefly in filtered water, drain and squeeze out excess water.
- Mix garlic, ginger, chilli, fish sauce or tamari and the remaining 8 g salt into a paste.
- Wearing gloves, work the paste into the cabbage, daikon, carrot and spring onion until evenly coated.
- Pack tightly into a clean jar so liquid covers the vegetables, leaving 3 cm headspace.

- When sour enough for you, refrigerate.
