Ingredients

  1. 6 piece organic eggs
  2. 150 g organic garlic chives (or chives plus 1 garlic clove), in 4 cm lengths
  3. 2 tbsp organic avocado oil
  4. 1 tbsp light soy sauce or tamari
  5. 1 tsp toasted sesame oil
  6. 1 pinch ground white pepper
  7. 200 g organic pak choi, halved
  8. 1 tsp toasted sesame seeds

Step-by-step method

  1. Beat the eggs with half the soy sauce and the white pepper until just combined.
  2. Heat 1 tbsp oil in a wok over high heat until it shimmers. Pour in the eggs and let them set for 10 seconds, then fold into large soft curds. Tip onto a plate while still glossy.
  3. Add the remaining oil, then the pak choi, cut side down. Sear for 1 minute, turn and add a splash of water; cover for 1 minute.
  4. Push the pak choi aside, add the garlic chives and stir-fry for 30–40 seconds until bright green and just wilted.
  5. Return the eggs, add the rest of the soy sauce and the sesame oil, toss twice and serve at once, scattered with sesame seeds.
