Ingredients
- 225 g low-moisture whole-milk mozzarella, shredded (dough)
- 60 g cream cheese, full fat
- 120 g blanched almond flour
- 1 piece egg
- 1 tsp baking powder, aluminium-free
- 0.5 tsp fine sea salt
- 1 tsp dried oregano
- 120 g tomato passata (no added sugar)
- 120 g low-moisture mozzarella, shredded (topping)
- 60 g spicy salami, thinly sliced
- 1 handful fresh basil leaves
- 1 tbsp extra-virgin olive oil
- 100 g arugula
- 2 tbsp extra-virgin olive oil
- 1 tbsp lemon juice
- 20 g Parmesan, shaved
Step-by-step method
- Heat the oven to 220 C / 425 F with a baking sheet inside. Cut two sheets of baking paper to 28 cm squares.
- Melt the dough cheeses: put 225 g mozzarella and the cream cheese in a bowl, microwave 60 seconds, stir, then 30 more seconds until smooth and stringy. (Or stir in a pan over low heat.)
- Add almond flour, egg, baking powder, salt and oregano. Stir, then knead with oiled hands until a smooth, uniform dough forms. If it cools and goes stiff, re-warm 15 seconds.
- Divide in two. Place each between paper and roll to 3 mm thick, about 25 cm round. Peel off the top paper.
- Prick all over with a fork. Slide, on the paper, onto the hot sheet and par-bake until golden at the edges and set.
- Remove, spread with passata, scatter with topping mozzarella and salami. Bake again until bubbling with browned spots.
- While it bakes, toss arugula with olive oil, lemon juice, salt and pepper.
- Rest the pizza 2 minutes, brush the crust with olive oil, top with basil, then pile on the dressed arugula and Parmesan. Slice and serve.
Chef’s tips
- The par-bake is the anti-failure step: it dries the base so it stays crisp under toppings.
- Use low-moisture block mozzarella you shred yourself, not fresh balls, or the dough turns wet.
- Rolling between paper means no sticking and no extra flour.
- Keep toppings light; too many wet toppings soften the centre.
Variations
- Margherita: passata, torn mozzarella, basil, finish with olive oil.
- White pizza: creme fraiche, garlic, roasted mushrooms, thyme.
- Calzone: fold over fillings and seal before the second bake.
- Garlic breadsticks: bake plain dough, brush with garlic butter.
Storage
Par-baked bases keep 3 days in the fridge, or freeze 2 months between paper. Finished pizza reheats in a 200 C oven for 8 minutes; the salad is always fresh.
