Ingredients
- 2 piece organic leeks, white and pale green, sliced (about 300 g)
- 40 g organic butter
- 400 g organic cooked chicken, shredded
- 6 piece organic eggs
- 200 ml organic crème fraîche
- 120 g Gruyère, grated
- 1 pinch nutmeg, salt and pepper
- 1 tbsp organic thyme leaves
- 150 g organic mixed salad leaves, to serve
- 2 tbsp organic olive oil and lemon
Step-by-step method
- Heat the oven to 180 °C (fan 160 °C) and butter a 24 cm baking dish.
- Melt the butter, add the leeks and a pinch of salt and cook gently, covered, for 12 minutes until meltingly soft but not coloured.
- Whisk the eggs with crème fraîche, nutmeg, pepper and most of the Gruyère.
- Spread the leeks and chicken in the dish, pour over the custard, scatter with thyme and the rest of the cheese.
- Bake 30–35 minutes until just set with a slight wobble in the centre and golden on top.
- Rest 10 minutes and serve warm with a dressed green salad.
Chef’s tips
- Leeks hold grit: slice them first, then wash in a bowl of water.
- Take it out while the centre still wobbles; it sets as it rests.
Variations
- Use smoked salmon and dill instead of chicken.
- Add sautéed mushrooms.
Storage
