Ingredients
- 150 g organic unsalted butter, softened (per flavour)
- 2 tbsp organic parsley, finely chopped (herb & garlic)
- 1 tbsp organic chives, chopped
- 1 piece small organic garlic clove, grated
- 1 tsp organic lemon zest
- 1 piece shallot, finely minced (Café de Paris variation)
- 0.5 tsp sea salt
Step-by-step method
- Soften the butter at room temperature for about 1 hour.
- Mix. Beat with a spatula until smooth, then fold in the flavourings of your choice (below).
- Roll. Spoon onto a sheet of baking parchment. Fold the paper over and roll into a log about 3 cm (1¼ in) wide, twisting the ends like a sweet.
- Chill for at least 1 hour until firm.
- Slice into coins and place on hot food just before serving.
Chef’s tips
- If it looks greasy or separated: the butter was too warm. Chill the bowl for 10 minutes and beat again.
- If it is too soft to roll: chill the mixture 15 minutes first.
- Use whole fresh herbs, never dried, for colour and fragrance.
- Slice one coin onto steak, fish, grilled chicken or hot vegetables and let it melt into a sauce at the table.
Variations
- Garlic-chilli: garlic, chilli flakes, lime zest.
- Roquefort or blue cheese butter: for steak.
- Seaweed butter: finely chopped dulse or nori and lemon, for fish.
- Wild garlic or ramsons butter in spring.
