Ingredients
- 400 ml organic full-fat coconut milk (no added sugar)
- 600 ml organic chicken or fish stock
- 2 stalk lemongrass, bruised and halved
- 1 thumb organic fresh ginger, sliced
- 2 piece organic garlic cloves, sliced
- 1 piece red chilli, sliced
- 300 g organic raw prawns, peeled
- 150 g organic mushrooms, sliced
- 80 g organic pak choi or spinach, roughly chopped
- 1 tbsp tamari or fish sauce
- 1 piece organic lime, juiced
- 1 handful fresh organic coriander, torn
Step-by-step method
- Pour the coconut milk and stock into a pan with the lemongrass, ginger, garlic and half the chilli. Bring to a gentle simmer and infuse for 10 minutes.
- Add the mushrooms and simmer 3 minutes, then the tamari (or fish sauce).
- Add the prawns and pak choi and simmer just 2–3 minutes, until the prawns are pink and the greens are bright. Don't overcook the prawns.
- Take off the heat. Fish out the lemongrass, then stir in the lime juice. Taste: it should sing with salt, sour and heat.
- Serve topped with coriander, the rest of the chilli and lime wedges.
Chef’s tips
- Add the lime OFF the heat so it stays fresh and bright.
- Balance is everything: adjust salt (tamari), sour (lime) and heat (chilli) at the end until it pops.
- Prawns cook in moments — pull the pan the second they turn pink or they go rubbery.
Variations
- Chicken: use thin-sliced thigh; simmer 6–7 minutes instead.
- Tom-yum style: add a spoon of tom-yum paste (check for sugar) and cherry tomatoes.
- Noodly: add konjac (shirataki) noodles or courgette noodles to make it a full meal.
Storage
Best fresh (seafood). The coconut broth base keeps 2 days; add prawns and greens when reheating.
