Ingredients
- 400 g organic chicken livers, trimmed
- 150 g organic butter, soft
- 1 piece organic shallot, chopped
- 1 piece organic garlic clove
- 1 tbsp organic thyme leaves
- 2 tbsp brandy (optional)
Step-by-step method
- Soften shallot and garlic in 20 g butter for 3 minutes.
- Add the livers and thyme and cook 3–4 minutes until browned but pink inside; add the brandy and let it bubble.
- Blend with 100 g butter until silky; season well and press through a sieve for extra smoothness.
- Spoon into a dish, pour over the rest of the melted butter and chill 2 hours.
Chef’s tips
- Pink inside means smooth pâté; overcooked livers turn grainy.
- Liver is very rich in vitamin A: avoid in pregnancy, and enjoy it as a small portion. Cook livers until no longer bloody; people with haemochromatosis should avoid it.
Variations
- Add a little orange zest.
- Use duck livers.
Storage
Keeps 5 days in the fridge under its butter seal.
