- 3 piece organic limes, juiced (only part is eaten)
- 1 piece small red onion, very thinly sliced
- 1 piece organic red chilli, finely chopped
- 15 g organic coriander
- 1 piece ripe organic avocado, diced
- 150 g organic cucumber, diced
- 2 tbsp organic extra-virgin olive oil
Step-by-step method
- Cut the fish into 1.5 cm cubes and toss with lime juice, onion, chilli and salt.
- Chill 15–20 minutes until the outside turns white.
- Drain off most of the juice, fold in cucumber, avocado, coriander and oil.
- Serve straight away in chilled bowls.
Chef’s tips
- Lime juice changes the texture but does not kill bacteria like heat does, so freshness is everything.
- Raw fish must be sashimi-grade and frozen to -20 °C for 24 hours first if wild, to kill parasites. Avoid in pregnancy or with a weak immune system.
Variations
- Use salmon or prawns.
- Add a little grapefruit.
Storage
Eat within an hour of making.
