Ingredients
- 2 piece cans wild salmon with skin and bones (about 400 g drained)
- 2 piece organic eggs
- 40 g organic ground almonds
- 2 piece organic spring onions, sliced
- 10 g organic dill, chopped
- 1 tsp Dijon mustard
- 2 tbsp organic olive oil or ghee
- 200 g organic Greek yogurt
- 1 piece organic lemon, zest and juice
- 150 g organic rocket and cucumber
Step-by-step method
- Drain the salmon and mash it with the bones and skin: the bones crush easily and carry the calcium.
- Mix with eggs, almonds, spring onions, half the dill, mustard, lemon zest and pepper. Shape into 8 patties.
- Chill 10 minutes so they hold together.
- Fry in the oil over medium heat 3–4 minutes per side until golden.
- Stir the remaining dill and lemon juice into the yogurt and serve with the patties and salad.
