Ingredients

  1. 250 g organic blanched almond flour
  2. 30 g organic psyllium husk powder
  3. 2 tsp baking powder
  4. 0.75 tsp fine sea salt
  5. 6 piece organic eggs, separated
  6. 30 ml organic extra-virgin olive oil
  7. 15 ml organic apple cider vinegar
  8. 180 ml boiling water
  9. 1 tbsp organic sesame seeds
  10. 1 tbsp organic pumpkin seeds

Step-by-step method

  1. Heat the oven to 175 C (350 F). Line a small loaf tin with parchment, leaving an overhang so the loaf lifts out easily.
  2. Whisk almond flour, psyllium, baking powder and salt until no clumps remain. Keep the dry mix loose and aerated rather than packing it down.
  3. In another bowl, whisk egg yolks with olive oil and vinegar. Fold this mixture through the dry ingredients until evenly moistened.
  4. With clean beaters, whip egg whites to soft peaks. Fold one-third into the almond mixture to loosen it, then gently fold in the rest.
  5. Pour in the boiling water and fold briskly just until a thick, scoopable batter forms. Transfer at once to the tin and smooth the top; the psyllium continues to absorb water as it stands.
  6. Scatter sesame and pumpkin seeds over the top. Bake until the loaf is firm, browned and sounds hollow when tapped, about 50 minutes. If the crust darkens early, cover loosely with parchment.
  7. Lift the loaf onto a rack and cool completely before slicing. A warm loaf can seem gummy inside; give the crumb time to set.
