Dark Chocolate & Orange Mousse with Crushed Hazelnut

Silky, deeply chocolatey mousse brightened with fresh orange zest and a little coffee. A crisp scatter of hazelnut gives each spoonful a clean, toasty finish.

Serves 6 · Active: 30 min · Total: 180 min

Per serving (estimate): 7 g net carbs · 7 g protein · 38 g fat · ~430 kcal

Ingredients

Method

  1. Set a heatproof bowl over a saucepan of barely simmering water. The bowl should sit above the water, not touch it. Add chocolate and coffee, then stir until smooth. Lift off the heat and leave to cool until warm, not hot. (about 5 min)
  2. Whisk egg yolks, powdered erythritol if using, orange zest and salt in a second heatproof bowl. Whisk in 100 ml cream.
  3. Set the yolk bowl over the simmering water. Whisk constantly, scraping the sides, until the custard reaches 71 C and thickens enough to coat a spoon. Remove it from the heat at once. (about 6 min)
  4. Whisk the warm custard into the melted chocolate until glossy. Leave it to cool until barely warm, stirring once or twice so the edges do not set. (about 15 min)
  5. Whip the remaining 200 ml cream to soft peaks. Fold one-third into the chocolate mixture to loosen it, then gently fold in the rest until no pale streaks remain. (about 3 min)
  6. Spoon into six small glasses. Cover and chill until softly set, about 2 hours. Finish with toasted hazelnuts and raspberries just before serving. (about 120 min)

Make-ahead & storage

Cover and refrigerate for up to 2 days. Add nuts and berries just before serving. This mousse contains cooked egg yolks; keep it chilled and do not leave it at room temperature for extended periods.

Lemon-Vanilla Baked Cheesecake with Almond Crust

A softly set cheesecake with a buttery almond crust, bright lemon and a quiet vanilla warmth. Chill it overnight for the cleanest slices and an even silkier texture.

Serves 10 · Active: 30 min · Total: 390 min

Per serving (estimate): 6 g net carbs · 9 g protein · 34 g fat · ~370 kcal

Ingredients

Method

  1. Heat the oven to 170 C (340 F). Butter the base and sides of a springform tin, then line the base with a circle of baking parchment.
  2. Stir almond flour with melted butter and powdered erythritol if using. Press the mixture firmly over the base of the tin, making an even layer.
  3. Bake the crust until lightly golden and fragrant, about 10 minutes. Set the tin on a rack and let the crust cool while you make the filling. (about 10 min)
  4. Beat cream cheese on low speed until smooth. Add sour cream, erythritol, lemon zest, lemon juice, vanilla and salt. Mix just until combined, scraping the bowl once.
  5. Add eggs one at a time, mixing on low after each just until incorporated. Avoid whipping in excess air; a gentle mix helps prevent a cracked surface.
  6. Pour filling over the cooled crust and smooth the top. Bake until the outer edge is set and the centre still has a slight wobble, about 55 minutes. (about 55 min)
  7. Turn off the oven and leave the door slightly ajar. Let the cake cool gradually for 45 minutes, then move it to a rack to cool completely. (about 45 min)
  8. Cover and chill until firm, at least 4 hours. Run a thin knife around the edge before releasing the tin. Cut with a warm, clean knife for neat slices. (about 240 min)

Vanilla Mascarpone Custard Ice Cream

A slow-churned custard with the mellow richness of mascarpone and real vanilla. Scoop it alongside berries or let a small bowl be dessert all by itself.

Serves 8 · Active: 30 min · Total: 390 min

Per serving (estimate): 4 g net carbs · 4 g protein · 30 g fat · ~300 kcal

Ingredients

Method

  1. Warm cream, vanilla seeds and pod, and salt in a saucepan until steaming but not boiling. Remove from the heat and let the vanilla infuse for 10 minutes. (about 10 min)
  2. Whisk egg yolks with powdered erythritol until slightly paler. Slowly whisk in a ladle of warm cream to temper the yolks.
  3. Pour the yolk mixture into the saucepan. Cook over low heat, stirring constantly, until the custard reaches 71 C and coats the back of a spoon. Do not let it boil. (about 8 min)
  4. Strain into a clean bowl and whisk in mascarpone until smooth. Set the bowl over an ice bath and stir until cool, then cover and chill until thoroughly cold, about 3 hours. (about 180 min)
  5. Churn the cold custard in an ice-cream maker according to its instructions until thick and softly frozen, usually 20-25 minutes. (about 22 min)
  6. Transfer to a chilled container, smooth the top and cover. Freeze until firm enough to scoop, about 2 hours. Let stand briefly at room temperature before serving with raspberries. (about 120 min)

Cacao & Almond Butter Bites with Toasted Coconut

A small, rich bite with roasted almond, dark cacao and a crisp coconut finish. Keep a few chilled for an after-dinner treat or serve them with espresso.

Serves 6 · Active: 20 min · Total: 80 min

Per serving (estimate): 4 g net carbs · 6 g protein · 28 g fat · ~290 kcal

Ingredients

Method

  1. Toast coconut flakes in a dry skillet over medium-low heat, stirring often, until pale gold and fragrant. Tip onto a plate so the hot pan does not darken them further. (about 3 min)
  2. Stir almond butter, melted coconut oil, cacao, powdered erythritol if using, vanilla and salt until completely smooth and glossy.
  3. Spoon the mixture into a small parchment-lined tray or silicone moulds. Smooth the top and scatter toasted coconut over it, pressing the flakes lightly into the surface.
  4. Chill until firm, about 1 hour. Lift from the tray and cut into twelve small pieces. Let them soften briefly before serving for the creamiest texture. (about 60 min)
  5. Arrange two pieces per serving with a raspberry half if using. Keep the remaining bites chilled while you serve.

Variations

Make-ahead & storage

Store in a sealed container in the refrigerator for up to 2 weeks, or freeze for up to 2 months. Keep chilled until serving because coconut oil softens at warm room temperature.
