Rosemary Fathead Flatbread with Whipped Feta & Greens

A tender, golden flatbread with rosemary in the dough and a cool swipe of whipped feta beneath peppery leaves. Tear it warm and let lunch feel like an occasion.

Serves 8 · Active: 20 min · Total: 45 min

Per serving (estimate): 3 g net carbs · 10 g protein · 15 g fat · ~190 kcal

Ingredients

Method

  1. Heat the oven to 200 C (400 F). Line a baking sheet with baking parchment. Whip the feta, yoghurt and lemon zest until creamy, then chill while you make the bread.
  2. Put mozzarella and cream cheese in a heatproof bowl. Warm in short bursts, stirring between each, until melted and glossy. Do not let the cheese brown. (about 2 min)
  3. Stir almond flour, psyllium, rosemary and salt together. Add the warm cheese mixture and egg. Fold until a soft dough forms; if it feels sticky, let it stand briefly before handling. (about 3 min)
  4. Set the dough between two sheets of parchment and roll into a rough oval about 1 cm thick. Peel away the top sheet and brush the surface lightly with olive oil.
  5. Bake until the edges are deeply golden and the centre feels set, about 15 minutes. (about 15 min)
  6. Spread the whipped feta over the warm flatbread. Top with arugula, a little extra lemon zest and a thread of olive oil. Cut into eight pieces and serve warm.
  7. Leave the flatbread on the tray for a few minutes so its crumb finishes setting. (about 5 min)

Almond & Psyllium Sandwich Loaf with Seeded Crust

A sliceable, gently nutty loaf with a soft crumb and a shower of seeds on top. Toast a slice until crisp at the edges, then pile on butter, eggs or something green.

Serves 12 · Active: 20 min · Total: 140 min

Per serving (estimate): 3 g net carbs · 8 g protein · 15 g fat · ~180 kcal

Ingredients

Method

  1. Heat the oven to 175 C (350 F). Line a small loaf tin with parchment, leaving an overhang so the loaf lifts out easily.
  2. Whisk almond flour, psyllium, baking powder and salt until no clumps remain. Keep the dry mix loose and aerated rather than packing it down.
  3. In another bowl, whisk egg yolks with olive oil and vinegar. Fold this mixture through the dry ingredients until evenly moistened.
  4. With clean beaters, whip egg whites to soft peaks. Fold one-third into the almond mixture to loosen it, then gently fold in the rest. (about 4 min)
  5. Pour in the boiling water and fold briskly just until a thick, scoopable batter forms. Transfer at once to the tin and smooth the top; the psyllium continues to absorb water as it stands.
  6. Scatter sesame and pumpkin seeds over the top. Bake until the loaf is firm, browned and sounds hollow when tapped, about 50 minutes. If the crust darkens early, cover loosely with parchment. (about 50 min)
  7. Lift the loaf onto a rack and cool completely before slicing. A warm loaf can seem gummy inside; give the crumb time to set. (about 60 min)

Make-ahead & storage

Cool completely, slice, and refrigerate in a sealed container for up to 5 days. Freeze slices with parchment between them for up to 2 months; toast from frozen.

Crisp Herb Seed Crackers with Whipped Avocado

Thin, lacy seed crackers with a satisfying snap and a savoury herb finish. A cool avocado mash and peppery watercress make a simple, generous nibble.

Serves 12 · Active: 20 min · Total: 75 min

Per serving (estimate): 2 g net carbs · 5 g protein · 11 g fat · ~130 kcal

Ingredients

Method

  1. Heat the oven to 160 C (320 F). Line two large baking trays with parchment so the crackers can bake in a single layer.
  2. Stir flax, chia, pumpkin, sesame, sunflower seeds, thyme, garlic powder and salt in a bowl. Pour in warm water and mix until every seed is coated.
  3. Leave the mixture until the chia and flax form a thick gel, about 10 minutes. It should hold together when pressed with a spoon. (about 10 min)
  4. Divide the mixture between the trays. Cover each portion with another sheet of parchment and roll very thinly and evenly, about 2 mm. Peel off the top sheets and score into squares with a knife.
  5. Bake until the edges are dry and golden, about 30 minutes. Rotate the trays halfway through. Remove any crisp edge pieces and return the thicker centre pieces to the oven until dry. (about 30 min)
  6. Cool the crackers fully on the trays; they crisp as they cool. Mash avocado with lime juice and a pinch of salt, then serve with watercress leaves. (about 15 min)

Make-ahead & storage

Keep fully cooled crackers in an airtight container for up to 1 week. Re-crisp briefly in a low oven if needed. Mash the avocado just before serving.

Soft Psyllium Breakfast Rolls with Chive Butter & Cucumber

Light, tender rolls with a golden crust and a pleasantly springy crumb. Split one while it is still warm and fill it with chive butter, cucumber and leafy greens.

Serves 6 · Active: 25 min · Total: 90 min

Per serving (estimate): 4 g net carbs · 7 g protein · 14 g fat · ~175 kcal

Ingredients

Method

  1. Heat the oven to 175 C (350 F). Line a baking sheet with parchment. Stir almond flour, psyllium, baking powder and salt until evenly combined.
  2. Whisk egg whites with vinegar until foamy but not stiff. Pour into the dry ingredients and stir to make a thick, even mixture.
  3. Pour in boiling water and stir firmly until the dough thickens and pulls together. Leave it for a few minutes so the psyllium can hydrate. (about 3 min)
  4. Wet your hands and divide the dough into six equal pieces. Shape each into a smooth roll and space them apart on the tray.
  5. Bake until the rolls are firm, lightly browned and sound hollow when tapped, about 40 minutes. Transfer to a rack. (about 40 min)
  6. Mix softened butter with chives. Split each roll and spread with chive butter. Fill with cucumber and baby spinach for a fresh, savoury finish.
  7. Let the rolls cool until just warm before splitting; this helps the crumb set. (about 15 min)

Soft Almond Herb Tortillas with Avocado & Lettuce

Flexible skillet tortillas with a gentle cumin note and a soft fold that holds its filling. Tuck in avocado, crisp lettuce and leftover roast chicken for an easy lunch.

Serves 6 · Active: 25 min · Total: 50 min

Per serving (estimate): 4 g net carbs · 5 g protein · 10 g fat · ~125 kcal

Ingredients

Method

  1. Stir almond flour, psyllium, cumin and salt in a bowl. Add the egg and most of the warm water, then mix into a soft dough. Add the remaining water only if dry patches remain.
  2. Cover and rest the dough until it feels supple and easy to shape, about 10 minutes. Divide into six equal portions and roll each into a ball. (about 10 min)
  3. Place one ball between two sheets of parchment. Roll into a thin round about the size of a small plate. Keep the remaining dough covered so it does not dry out.
  4. Warm a heavy skillet over medium heat. Peel the tortilla from the parchment and cook until small golden spots appear, about 1 minute per side. Adjust the heat if it colours before it sets. (about 2 min)
  5. Stack cooked tortillas under a clean towel to keep them soft while you cook the rest. Fill with avocado, lettuce, cucumber and coriander, then fold gently to serve.

Variations

Make-ahead & storage

Refrigerate stacked tortillas with parchment between them for up to 3 days. Rewarm in a dry skillet or covered pan. Freeze for up to 1 month with parchment between each one.

Cauliflower & Spinach Pizza Crust with Basil Greens

A crisp-edged vegetable crust with a tender middle, made from cauliflower, spinach and a little Parmesan. It carries a simple tomato topping beautifully and stays sturdy enough to pick up by the slice.

Serves 6 · Active: 30 min · Total: 75 min

Per serving (estimate): 6 g net carbs · 9 g protein · 8 g fat · ~130 kcal

Ingredients

Method

  1. Heat the oven to 220 C (425 F). Line a large baking tray with parchment and brush it lightly with olive oil.
  2. Pulse cauliflower in a food processor until it resembles coarse couscous. Steam until just tender, about 5 minutes, then spread on a clean towel to cool slightly. (about 5 min)
  3. Wilt spinach in a dry pan. Cool it, then squeeze both the spinach and cauliflower very firmly in separate towels until no more liquid drips out. This is the key to a crust that holds together.
  4. Chop the spinach finely. Mix it with cauliflower, egg, Parmesan, almond flour, oregano and salt until the mixture holds when pressed.
  5. Press the mixture into a thin, even round on the oiled parchment. Make the edges slightly thicker to form a rim. Bake until the surface is dry and golden, about 25 minutes. (about 25 min)
  6. Spread passata thinly over the crust and scatter mozzarella on top. Bake until the cheese bubbles and the base is crisp at the edge, about 8 minutes. (about 8 min)
  7. Rest briefly before slicing. Finish with arugula and basil so each warm slice gets a fresh, peppery crown. (about 5 min)

Chef's tips

Variations

Make-ahead & storage

Bake the crust through, cool and refrigerate for up to 3 days before topping. Re-crisp in a hot oven, then add toppings. Freeze the baked untopped crust for up to 1 month, wrapped well.
