Module 6 · Comfort

Comfort food reimagined: beating cravings

Why this module exists

The number one reason people leave a way of eating is not hunger. It is the feeling of being left out: the pizza night, the burger, the Sunday pancakes. This module takes the foods you miss most and rebuilds them properly, from scratch, with organic ingredients, so nothing feels like a substitute. When the plate is delicious, the craving has nothing left to argue with.

Our rules for every dish here:

Nutrition figures are best-estimate per serving, calculated from typical ingredient values; they will vary with brands. Net carbs = total carbohydrate minus fibre.

Fathead Pizza with Lemony Arugula Crown

A properly crisp-edged, chewy-centred pizza from a melted-mozzarella dough, finished with a heap of peppery lemon-dressed arugula. Two pizzas, no deprivation.

Serves 4 · Active 30 min · Total 50 min · ~8 g net carbs, 33 g protein, 50 g fat, 610 kcal per serving (estimate)

Ingredients (all organic)

Method

  1. Heat the oven to 220 C / 425 F with a baking sheet inside. Cut two sheets of baking paper to 28 cm squares.
  2. Melt the dough cheeses: put 225 g mozzarella and the cream cheese in a bowl, microwave 60 seconds, stir, then 30 more seconds until smooth and stringy. (Or stir in a pan over low heat.) (timer: 2 min)
  3. Add almond flour, egg, baking powder, salt and oregano. Stir, then knead with oiled hands until a smooth, uniform dough forms. If it cools and goes stiff, re-warm 15 seconds.
  4. Divide in two. Place each between paper and roll to 3 mm thick, about 25 cm round. Peel off the top paper.
  5. Prick all over with a fork. Slide, on the paper, onto the hot sheet and par-bake until golden at the edges and set. (timer: 8 min)
  6. Remove, spread with passata, scatter with topping mozzarella and salami. Bake again until bubbling with browned spots. (timer: 6 min)
  7. While it bakes, toss arugula with olive oil, lemon juice, salt and pepper.
  8. Rest the pizza 2 minutes, brush the crust with olive oil, top with basil, then pile on the dressed arugula and Parmesan. Slice and serve.

Make ahead and storage

Par-baked bases keep 3 days in the fridge, or freeze 2 months between paper. Finished pizza reheats in a 200 C oven for 8 minutes; the salad is always fresh.

  4. Sauce and slaw: stir mayonnaise, mustard and chopped pickle. Toss cabbage and fennel with oil, lemon, salt and pepper; set aside.

Crispy Parmesan Zucchini Fries with Garlic Aioli

Golden, genuinely crunchy oven fries with a parmesan-almond crust and a punchy garlic-lemon aioli, plus a watercress salad to sit alongside.

Serves 4 · Active 25 min · Total 50 min · ~8 g net carbs, 15 g protein, 41 g fat, 461 kcal per serving (estimate)

Ingredients (all organic)

  1. Toss zucchini sticks with the salt in a colander and leave to sweat. This pulls out water and is the key to crispness. (timer: 20 min)
  2. Heat oven to 220 C / 425 F with a rack inside. Line two trays with paper and brush with avocado oil.
  3. Squeeze the sticks hard in a clean tea towel until barely damp, then pat dry.

  5. Dip each stick in egg, roll in crumb mix, pressing firmly, and lay on trays with space between them.
  6. Bake, turning once halfway, until deep golden. For extra crunch grill 2 minutes at the end. (timer: 22 min)
  7. Stir together mayonnaise, garlic, lemon and mustard for the aioli.
  8. Dress the watercress with oil, lemon and salt. Serve fries hot with aioli and salad.

Creamy Lemon-Garlic Zucchini Fettuccine with Prawns

Silky ribbons of zucchini in a glossy parmesan cream with garlicky prawns and wilted spinach: restaurant pasta comfort, not a sad salad.

Serves 4 · Active 30 min · Total 40 min · ~9 g net carbs, 33 g protein, 39 g fat, 519 kcal per serving (estimate)

Ingredients (all organic)

Method

  1. Salt the zucchini ribbons in a colander and leave 15 minutes; press out the liquid and pat dry. (timer: 15 min)
  2. Toast pine nuts in a dry pan until golden; tip out. (timer: 3 min)
  3. Season prawns with salt and pepper. Sear in 1 tbsp olive oil in a hot wide pan, about 1 minute per side until just pink; remove. (timer: 2 min)
  4. Lower heat, melt butter, add garlic for 30 seconds without browning.
  5. Pour in cream and bring to a gentle simmer; reduce 3 minutes until it coats a spoon. Whisk in Parmesan off the boil until smooth. (timer: 4 min)
  6. Add lemon zest and juice, then the spinach to wilt in the sauce. (timer: 1 min)
  7. Add the zucchini and toss over medium heat for just 90 seconds so it stays al dente. Return the prawns. (timer: 2 min)
  8. Serve at once, topped with pine nuts, parsley, extra Parmesan and pepper.

Fluffy Cream Cheese Pancakes with Berries and Vanilla Cream

Tall, tender, golden pancakes that taste like Sunday morning, with warm berries and whipped cream. The same batter makes waffles.

Serves 4 · Active 25 min · Total 30 min · ~9 g net carbs, 15 g protein, 51 g fat, 555 kcal per serving (estimate)

Method

  1. Whisk almond flour, coconut flour, baking powder and salt.

  4. Heat a non-stick pan over medium-low and melt a little butter.
  5. Spoon 3 tbsp batter per pancake, 8 cm wide. Cook until the edges set and tiny bubbles form, then flip gently. (timer: 3 min)
  6. Cook the second side until golden, about 2 minutes. Keep warm in a low oven; repeat for about 12 pancakes. (timer: 2 min)
  7. Warm raspberries in a small pan for 2 minutes, lightly crushing them. Whip cream with vanilla to soft peaks. (timer: 2 min)
  8. Stack pancakes and top with berries and cream.
